Ingredients:
- 2 over ripe banana, mashed
- 1/2 cup walnut, chopped
- 1 cup whole wheat flour
- 1 cup all purpose flour
- 1 egg, separated
- 1/2 cup preferred liquid sweetener, I used agave
- 1/4 cup light olive oil or melted butter
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp ground cinnamon
- a pinch of salt
Directions:
- Combine the dry ingredients in a bowl, mix with a whisk
- In a bowl mix mashed banana, egg yolk, liquid sweetener, and olive oil
- Whisk the egg white until stiff
- Fold the egg white into the banana mixture
- Add the dry ingredients to the wet mixture, do not over mix
- Pour the batter into a loaf pan
- Bake in the pre-heated oven on 175 Celcius for about 40 to 50 minutes until a toothpick inserted into the center of the loaf comes out clean
You may find this banana bread not to sweet because it's how I like it. You can add more sweetener to your preferred taste, have a try
