- 1.5 cup all purpose flour
- 1 cup tapioca or potato starch
- 1/2 cup plain yogurt
- 1 cup coconut milk
- 1/2 cup vegetable oil
- 2 egg, separated
- 2 tsp baking powder
- 2 tsp baking soda
- 3 tbsp sugar or preferred sweetener
- 2 tbsp green tea powder
- 1/2 tsp vanilla extract
- 2 tbsp of water or as needed
- a pinch of salt
Directions:
- Mix the flour, tapioca, salt, green tea powder, baking powder, and baking soda
- Combine egg yolk, yogurt, milk, and sugar in a mixing bowl, stir well
- Beat the egg white until stiff
- Mix all the wet and dry ingredients, do not over mix.
- Pre-heat the waffle iron, spray with cooking spray or lightly brush with some oil. You can use waffle maker as well
- Pour the waffle batter into the waffle iron, flip once one side is done
- Serve with vanilla ice cream, green tea powder, and soy bean powder
