You surely can use spinach, but I prefer horenso. Classic creamed spinach goes well with steak, grilled chicken, or even pasta. Some people do it with cream, I use milk instead because I added some cheese. Cheddar, mozzarella, and parmesan, my classic combination, no doubt. For me, Mimolette cheese also works well with the spinach but it's very hard to find here in Jakarta, anyway a couple table spoon of cream cheese can be added for even creamier spinach.
If using horenso, you surely can remove the stalk but I like to use both the stalks and leaves though you need to squeeze the blanched spinach really well to remove the excess water.
Ingredients:
- 4-5 bunch of horenso / spinach
- 2 tbsp butter
- 1 clove minced garlic
- 2 tbsp minced onion
- 1 tbsp all purpose flour
- 1 cup milk
- 1 cup cheese (combination of mozzarella, cheddar, parmesan, cream cheese, or any of your preference)
- salt to taste
- a pinch of grated nutmeg (optional)
- water as needed
- ice as needed
Directions:
- Blanch: put horenso (stalk first) in hot boiling water for 10 - 20 seconds, drain, place it immediately into cold iced water
- Squeeze the excess water, chop the dry horenso
- On a pan, add in the butter, garlic, and onion. Stir until the onion translucent, add in flour, stir.
- Pour milk little by little, then add the cheese and chopped spinach
- Add salt to taste, and nutmeg if you like
